I definitely recommend a DIY wood countertop with a Waterlox Tung Oil finish (WATERPROOF!!) Low maintenance. You just clean with a mix of white vinegar and water or mild soap and water. Both are cheap and common options for disinfecting.

I know several people who have gone with all-wood (butcher block) counters and they say they would not do it again. While they're pretty durable, you have to be prepared for surface damage and you have to religiously wipe up around sinks or you will get staining and possible rot. Lacquering or painting them would not be a good idea as this will just not hold up to the inevitable moisture and abrasion. If you do end up with wood, seal it with a non-toxic finish like mineral oil, and be prepared to re-do it regularly. I've had everything from formica to marble to granite -- as well as a small area of butcherblock -- and I would only go with granite from now on.

I saw your post on "crumbly granite" and don't know exactly what you have there, but I would find a regular granite. It will not have the maintenance problems which you will have with other materials.
