 27" or 36" sink cabinet dilemma

 Upper Wall Symmetry or not?

I like symmetry and ran into a slight problem that I linked below. A few commented maybe to do a blind corner which throws out the symmetry of the upper cabinets. I've posted pictures of both below and looking for feedback if I should lose the sym

We are selling an investment property. We are doing white Ikea cabinets (Lindingo). I am not planning on removing the soffit. The hood is Vent-a-hood but is painted over with silver. The back splash seems to be a part of it. Ugly? Should it stay?
