Most dyes are toxic or disagreeable, at least. You're aware the mineral oil is just about the only finish acceptable for this use. You may have to look at some of the old plant dyes that have been used in fabrics, but some of those are pretty disagreeable also.

Basically, no.

The mineral-based stains are OK after they have dried. They get the color from iron oxides, manganese, copper ... all minerals you find in food. Just don't gnaw on the board, OK?

It's the carrier oil and solvent that's nasty stuff, and then only if you drink it.

You want a different color? Buy a cutting board made from a different wood. They come in just about any wood you can imagine, from light woods like maple and ash to darker woods like walnut, ipe or purple heart.
