Interior exposed beam question

I recently remodeled my kitchen and had to put in 2 rough wood (unfinished) that runs 14' long by 12' in height and about 5" wide. Im trying to figure out what type of wood and trim I could use to finish it. I cant stain this, it wont work and we dont want to drywall. Any type of trim out there or wood to slap on. I looked at veeneres and I dont like them at all. Any help would be great

This is an in-process picture, but it may help. We have several new beams that I am covering to get them to blend in with our house. Basic thin plywood on the sides (glued) and 1x6 solid oak on the bottoms. I have one about the size of yours to do next.... some day.... sigh...

To be honest these things have almost been a blessing in disguise, they have become an architectural focus for the house.

Is a 8ft ceiling to low to have exposed beams? If not, what direction should you run them?
