we are remodeling out kitchen and have wood ceilings to contend with. I love the ceilings but what is the best way to deal with the hole left from removing a bathroom and fireplace? What kind of cost am I looking at to have the work done?

2X8 tongue and groove

Just span over the hole. If you need to end boards in the hole install some cross bracing.
