240V circuits

I have a countertop stove that is 240V 40A, 2wire. I purchased 8/2 wire for the circuit. Is that correct for the conductor size?

Also, I want to buy a wall oven, (240V, 20A). I don't know how many conductors are on this oven yet, but would it hurt anything to use 10/2 or 10/3 (depending on the oven specs), instead of 12/2 or 12/3? The question: is 10AWG going to cause any problems in a 20A circuit?

Oh, also, do these circuit conductors need to be put in conduit (flex/rmc/or other) due to the voltage?

Yes your sizing looks right. Sizing up to #10 shouldn't hurt anything. Unless you are in some place with odd local codes, you can just use the NM cables for these. The "voltage" is the same as any other wiring in your house. Again you need to check the instructions for the individual appliances to see how they terminate. Some you can make the connections inside the unit. Some have a "whip" coming out of them that you need to mate to a box you provide to make the connection in.
