Replacing vanity light

I'm replacing an old bathroom vanity light over the sink,
but I don't know at this point if I'll install a similar style light in the same location, or if I'll get two sconces to go on opposite sides of the mirror. I won't know which looks better until I get the wall painted.

In which order does it make sense to do things; if I have the existing fixture removed and the wires made dead so I can patch and paint the wall -- and I later decide to install a new fixture where the old one was -- how big a job is it to re-activate the wires?

If the walls have been painted, will installing the fixture or two new sconces damage the wall any?
