how to extend wiring into cabinets

I am about to try installing new cabinets, both floor and wall, into a room where currently are outlets that will be covered. I understand I need to keep these available by cutting into the backs of the cabinets. I'd like to convert these to j-boxes that will power plugmolding and under cabinet lighting. My understanding is to attach a metal cover to the boxes through which I will bring the cable secured with a clamp.

Any suggestions? Does the cable behind the cabinets need to be supported in any way, say attached to the drywall? Does it matter I am using a metal plate on a plastic box? It would be a PITA to change the boxes or pull new lines to these locations.
