The code-specified spacing seeks to indicate the minimum number of receptacles to be installed in a space. Nothing prohibits adding additional ones.
Don't be misled by the language of the code. Receptacles spaced 4 feet apart results in any space between them being within 2 feet of a receptacle.

Unless there is some break in the countertop six feet sounds like too long of a distance. No point along the wall on a wall countertop can be more than two feet from a receptacle.

Thanks for the replies. My wife will be happy the outlets will soon be more accessible. It drives her nuts that there are so few available outlets!
