I want to put in two ovens (as opposed to a double oven unit) in a kitchen wall. Both require 240V. Is it OK to put both on the same (adequately sized) circuit or are ovens required to have dedicated circuits? Electrical panel near maxed out so would prefer not to waste two slots.

There's no requirement for separate circuits, you need to read what the manufacturer recommends. Most units that are specifically sold as doubles (as opposed to two singles) typically only have one connection.
