The breaker box has a 50 amp breaker installed. The replacement double ovens require either a 30 or 40 amp breaker depending on the one I choose. My question is do I need to change the breaker in the box to match the requirement of the double oven I choose?

It seems this question is self-answering. The existing 50 is meaningless. It just happens to be there. If you need a 30 or 40 you need a 30 or 40.

thanks, really don't know why the builder put in the 50 since the present oven requires a 40 amp.

He may have been planning for a full range and put the 50 in just in case. At least you know the wire is big enough. Better too big than too small in this case.
