Making Cranberry Wine

We just finished cranberry harvest and I'd like to make some cranberry wine without using chemicals. I've made it a few times using a recipe that calls for chemicals. Does anyone have a good recipe they'd like to share?

3 lb. fresh cranberries 1/2 pt red grape conc. or 1 lb. raisins 7 pt water 2-1/2 lb sugar 1/2 tsp pectic enzyme 1/2 tsp yeast nutrient 1 crushed campden yeast 1 gallon recipe |

| Perry, that's almost what I use, but no concentrate or raisins and only 2 lb.s of sugar per gallon. I boil the crandberries until they pop, which seems to enhance the flavor. One of our local supermarkets must have seriously over estimated demand a few years ago. After the holidays, they had the 12oz. bags of Ocean Spray berries on sale for $.20 a bag. Needless to say, I stocked up on enough for about 30 gallons. Still have some in my freezer! |

2 pounds cranberries, fresh or frozen 1 pound raisins 3 pounds granulated sugar (about 6 3/4 cups) 1 campden tablet 1 teaspoon nutrients 1/4 teaspoon pectic enzyme 1 1/4 teaspoon acid blend 1 package wine yeast 1 gallon water |
