Dandelion wine

| I just went out and collected some freshly opened dandelions and spent some time pulling out the yellow petals. The recipe I've seen calls for 3 quarts of dandelions. It will take me quite a while to collect that. It may take a couple *years* to collect that. So in the meantime, can I freeze the dandelion petals that I have until I get enough? |

| I haven't frozen them long term so I can't say definitively - unfortunately my yard has more than enought dandelions to get that much. What I can tell you is that it's worth a shot since if you've pulled the yellow petals and any they have been pollinated, over the span of a week or so many will turn white at room temperature. |

This is our second yesr of making dandelion wine. I am the picker and he is the drinker! We make 5 gallons at a time. It takes me one hour to fill a gallon freezer bag. I do not pick the petals off. You need only to pick the flower and make sure none of the stem is left on the flower, that is what will ruin your wine. The green under the flower is ok to leave on. I pick and freeze them and they are good when we are ready to make the wine. Just make sure the flower is fully open when you pick them. My husband thinks this is some of the best tasting wine we have made and only gets better with time. He has drank it even after bottling for 6 mo. A lot of work picking 5 gallons of them but worth it to my husband. We make dry wine. |

| I froze my pedals... Our wine turned out bitter, not sweet. Even tried clover wine... same thing.. followed the recipe.. now we are reluctant to try again. |
