Wine left out overnight.

After a party, two full bottles of good red wine were left out, left open, overnight. I put them in the fridge in the morning. Is there anything I can do with them?

take them out of the frig and start drinking them :D

I so agree. I like warm red far better than cold red. And if you have a problem drinking it, throw it in your pasta sauce or cook a roast in it.

Any which way, do NOT throw it out.

I would still eat them, unless it was really hot where they were, which I don't think it would be at night. I would be ok with 70Â°, maybe 80Â°, but not a sunny car...except in places where it's sunny at night...there it's probably also cold enough to keep them refrigerated. I would eat them faster than usual though. How are the Bubbie's? I tried a jar of Ba-Tempte half sour pickles, and some of them were soft, which grossed me out and made me wonder whether the jar was safe. I have since found an occasional soft half-sour at pickle bars, so maybe it's just something that happens. I like making my own half-sours but they're not as good as the ones you get in NY. Melissa

Getting Wine Stain out of table cloths

I know this is an old post, but I thought I'd throw this out here anyway. I recently used 100% cotton, white cloth and napkins and by the end of the meal they were covered in spots (I'm a very sloppy eater!) The stains included quite a bit of red wine. The laundry didn't get done for several days and I thought that they were all "goners". Not so. I sprayed them all with "Spot Shot" and EVERY SINGLE STAIN CAME OUT. I just washed them on a regular cycle with a regular amount of laundry detergent. Incidentally, when we had our carpet cleaned recently the cleaning company couldn't get out some black grease spots from the ladder used during painting. I just said "no problem" and cleaned them all up in a jiffy with Spot Shot. It's billed, I think, as a carpet cleaner but we use it for almost everything around the house. I have no idea what is in it so if I were using very fine linens I would find out a little more about it -effects from long term use on certain materials, etc. but for cotton linens, spotting our clothes, etc. we consider it indispensible. We've found it at various grocery stores but usually buy it in quantities at Sams Club. Here's to more linen-requiring occasions! Amy

Oh no! I left turmeric on my marble counters overnight!

over the holiday, I left my Le Creuset dutch oven accidentally draining after washing directly on the marble, rather than on a towel. Next day I had a big rust ring. Usual initial panic. Got most of it up with just a dilute stone cleaner, then threw a little baking powder on and left for a couple hours. Got back, wiped down again and rust gone. And that's with a counter that is about a year overdue to be resealed. Still love our marble, and we have a ton of it. I've even come to really like the etching--becomes "personalized" in a way that cold hard granite (or even more so, man made solid surface) counters never do.

Dear friends, here I am with news! First of all, thank you so much for all your replies. This was my first post and it was so fitting that for this holiday, I would end up being so thankful for the kindness of strangers. There's one thing you need to know before knowing the outcome of my story. I live in Bogota, Colombia, a city located at 8.500 feet altitude. Due to this, it is usually pretty cold at night, around 45 degrees F. On to my story. On Tuesday, I decided to put the bird back in the refrigerator until Wednesday morning, when I took it out of the bag and seasoned it. It looked OK and did not smell funny. It still had some ice in it so I poured some water to disolve it and washed the bird thoroughly. I was a nervous wreck though, since I decided to not tell a soul about this (I agreed with you on this "Mustang"). I cooked it the same way I have been doing it for 15 years, basting and inyecting some nice juices. Ready for the result? I had 30 people eat the whole thing and not a soul got sick! The whole turkey was gone, no left overs and still, everybody is OK today. So, I'm guessing the fact that my kitchen was not so warm at night did help the cause. In conclusion, if this ever happens to me again (you never know right?) I will not stress over it and just go ahead and cook it. I hope you all had as wonderful a Thanksgiving as I did with my family and friends and I also hope to one day be able to help you, the way you did me. Gracias :)

It should last a week or so in the fridg - but let it come to room temp before you drink it!!!

According to French modicum for proper wine drinking, red wine should be consumed at room temperature. "Room Temperature" refers to the room temperature of a wine cellar, that being 55 degrees.

White wine should be chilled to a lower temperature than the wine cellar.

Wine keeps much much much longer than a week after opening. Air does not affect wine that much unless you are a wine snob.

After wine has been fermented to it's peak and then has been stabilized, aging is counted in terms of months or years, not days.

All the answers you received are good advice. Red wine can tolerate exposure to oxygen a little longer than white wine without oxidation being apparent. There might be a slight off taste (flat tasting) but there would be absolutely nothing wrong with drinking it. If exposed long enough to certain bacteria it can turn into vinegar but you are talking weeks. I use the bottle covers with the hand air pump to remove much of the air in the bottle, it can keep for several weeks sitting on the kitchen counter with little if any notice of oxidation aftertaste. Dump some into some marinated mushrooms and onions...yum yum. Makes me hungry just thinking about it.
