Using stabilizers in home grown grape wine

Greetings fellow Bacchanalians (hope no offense taken),

We are new to winemaking and have embraced it with gusto but have nothing yet to drink! We're doing two different things - making wine from home grown grapes (Concord and Niagra this year) and muscadines (several varieties) AND making wine from kits (i.e., VintnersReserve and Selection from Winexpert). In making kit wine the process calls for stabilizers Metabisulphite and Sorbate. In the instructions for using home grown grapes/muscadines (From Vines to Wines by Jeff Cox) no stabilizer(s) are called for in the winemaking process. Have we missed something? We have 3 - 5 gal. carboys of grape and muscadine wine that we put up in late August/September 2005 that are now 'aging'. If it matters, 1 white, 2 red.

I hope someone with experience in home grown grape/muscadine winemaking can help with the stabilizer question.
