Removing Sill Nose (Replacements)

I am tearing out my single pane windows and storm windows. Many of my sills have rot at the nose.

Given that I have no real interest in repairing/maintaining them when I put replacement windows in, can I just just cut the nose flush off with the house, put backer rod in (or something else?) and then put PVC trim board over?
