Thai Fried Rice 4 cloves garlic, chopped
4 tablespoons vegetable oil
(Fry garlic to brown. I use only one tlb of oil.)
ADD
1 cup firm tofu, sliced into strips
1 onion, sliced
1-2 sweet potatoes or white potatoes, diced
(I use blanched potatoes, but raw is okay.)
“Fry” for 2 0r 3 minutes
ADD
4 cups plain cooked rice
1/4 pound mushrooms, sliced
1-2 tomatoes, chopped
1 teaspoon brown sugar
3 tablespoons light soy sauce
“Fry” or 2 or 3 minutes
ADD
1/4 teaspoon good quality curry powder
1/2 tablespoon turmeric
1/4 teaspoon pepper
Serve, adding 0
2-3 green onions, sliced
2-3 sprigs Thai basil, snipped
