Several years ago, I remember seeing a recipe for a butter-like spread that was dairy free. I believe it had olive oil in it. I would appreciate any similar recipes that anyone has. Thank you!

Hi Sara
I don't how you feel about garlic, but, try this. In a blender or food processor puree about 3 whole bulbs of garlic adding a little olive oil this will blend into a butter type substance which is fantastic. I usually let it sit in the fridge about a day to mellow and blend.

Sounds very good. In fact, I do something very similar to this to accompany Italian meals. However, it's not exactly what I'm looking for for my breakfast toast or muffin.Thanks.

Well there is a brand of olive oil type margarine called Olivio. It doesn't have much of a olive taste. I use it and I think its good on just about anything like that (breakfast food).
