Veggie Millet Balls have replaced meatballs in our house. Rather than copy it, I'll send you to http://www.culinary.com/foodtext/veganand/1183.shtml. we chop the veggies finely and we BAKE the balls for about 20 minutes at 375 instead of frying. It takes a couple of steps and dirties a number of pans, but makes a "meatball" which is great and practically fat-free.
