LOOKING for: Lentil Stuffed Peppers

| I am looking for a recipe for stuffed peppers. I don't want the Indian style I've seen. Can I just take the "classic" recipe and replace the hamburger with lentils? Do I still include the rice? I use red or yellow peppers - hate the green ones!
I'm not vegetarian, but like to include good veg. dishes in my diet :) |

| Hi Weed, Yes, you can replace the meat with lentils on a 1:1 ratio. You might want to add some seasonings to the lentils, since they have less flavor than the meat. If you do add salt, be sure to not add it until the lentils are done cooking or it can toughen the skins a bit. I'd still add the rice. Paul |

| Thanks for the tip on the salt; I love lentils but don't use them as often as I should. I have a decent sized arsenal of spices, so I'm sure I can come up with something good. |
