This board seems a bit slow lately so I'll give it a bit of a boost. Here are some of my (and my family's) all time favorite recipes. Some of the recipes may call for bacon or ground beef or stuff, just substitute with veggie bacon (duh). The baked beans and crockpot minestrone are especially good on cold days, and boy is it getting cold here in Atlantic Canada!

Title: Bacon, Lettuce, and Tomato Pizza
Categories: Pizza, Main dish, American, Cheese, Favorites
Yield: 1 Pizza
1 pk Crecent rolls, refrigerated
1/2 c Mayonaise
8 oz Cream cheese, softened
1 pk Dry Ranch Dressing Mix
6 Bacon slices, cooked, diced
1 c Lettuce, shredded
1 Tomato, chopped
8 oz Cheddar cheese, shredded
1/4 c Green onion
Mix the mayo, cream cheese, and dressing mix together until smooth,
set aside. Preheat oven to 350 degrees. Unroll the crecent dough;
separate into triangles. Arrange triagles in circle on greased pizza
pan, with points toward the center and wide ends toward the outside.
Press seams together to seal. Bake 12-15 minutes until golden brown.
Remove from oven, cool completely. Spread the creamy mixture evenly
on to crust. Sprinkle with bacon. Top with lettuce, tomato, cheese,
and onion. Cut into wedges and serve.

Title: Cool Cucumber Pasta

Yield: 10 Servings
8 oz Small pasta (shells)
1 T Vegetable oil
2 Cucumbers, sliced
1 Onion, sliced
1 1/2 c Sugar
1 c Water
3/4 c Vinegar
1 T Prepared mustard
1 T Parsley
1 t Salt
1 t Pepper
1 t Garlic powder/salt
Cook pasta according to package, drain and rinse in cold water. Place
in a large bowl, stir in oil, cucumber and onions. Combine remaining
ingredients, pour over salad and toss. Cover and chill for 3-4 hours,
stirring occassionally. Serve with a slotted spoon.

Title: Mr.Noodle Pizza

Yield: 6 Servings
2 pk Beef flavor Mr.Noodles
Salt
3 c Water
1/2 lb Ground beef
1/2 c Mushrooms, sliced
15 oz Spaghetti sauce
3 T Parmesan cheese
1/2 c Onion, chopped
1/2 c Milk
1 Egg
8 oz Mozzarella cheese, grated
Aluminum foil
Cover pizza pan with aluminum foil. Build up foil edges to form about
1/2-inch tall rim around the edge. Lightly grease the aluminum
surface. Cook both packages of noodles with pinch of salt in water.
Do not use flavor packets. Drain noodles and set aside. Brown beef,
onions, and mushrooms together. Drain excess fat. Stir both flavor
packets into meat mixture. Set aside. Beat together egg, milk, and
parmesan cheese. Stir this mixture into noodles. Evenly spread
noodle/egg mixture on to pizza pan. Pour sauce over noodles. Sprinkle
on meat mixture, top with cheese. Bake at 350 degrees for twenty
minutes or until golden, bubbly brown. Let stand five minutes before
slicing. Great for parties.

Title: Best Broccoli Casserole

Yield: 4 Servings
1 c Water
1/2 t Salt
1 c Instant rice
1/4 c Butter
1/4 c Onion, chopped
1/4 c Celery, chopped
1 cn Cream of mushroom soup
1 cn Cream of celery soup
10 oz Broccoli, chopped
1/2 c American cheese, diced
Bring water and salt to a boil. Add rice; cover and remove from heat.
Let sit for five minutes. Melt butter in skillet; saute onion and
celery until tender. In large mixing bowl, combine rice, celery, and
onion with remaining ingredients. Pour into a greased 1 1/2 qt
casserole. Bake at 350 degrees for one hour.

Title: Baked Beans Vegetarian

Yield: 8 Cups
1 lb Navy beans, dry
3 T Brown sugar
3/4 t Salt
1 t Dry mustard
1/3 c Dark molasses
1/2 c Ketchup
2 Onions, chopped
12 Drops of liquid smoke
Soak and cook beans overnight. Drain. Mix with remaining ingredients.
Heat by desired method (stove, oven, crockpot)

Title: Stovetop Mexican Casserole

Yield: 4 Servings
1 pk Stovetop cornbread stuffing
1 Onion, finely chopped
1 Green pepper, chopped
1 Tomato, chopped
1 cn Kidney beans, drained
1 cn Corn, drained
1/2 c Chili sauce
2 T Taco sauce
1 c Monterey jack cheese
Cook stovetop as directions instruct, set aside. Fry onion, pepper in
oil. Ass rest of ingredients, except cheese.
Preheat oven to 375 degrees.
Press stuffing into bottom of casserole dish.
Top with the pan ingredients.
Bake fifteen minutes, top with cheese and bake five more minutes.

Title: Mom's Lentil Spaghetti

Yield: 6 Servings
1 c Onion, chopped
3 Cloves garlic, minced
2 T Olive oil
1 c Dry red lentils
2 c Water or stock
1 cn Tomato paste
1 cn Mushrooms
1/2 t Oregano
1/2 t Basil
Salt
Cayenne pepper
In a small saucepan, fry the onion and garlic until soft and aromatic.
Add the stock and lentils, bring to a boil. Simmer until the lentils
are tender, at least half an hour.
Stir in the remaining ingredients and simmer for ten minutes. Serve
over hot buttered noodles and top with parmesan cheese.

Title: Crock Pot Minestrone

Yield: 8 Servings
1 Onion, chopped
2 Stalks celery, sliced
2 Carots, sliced
1 Pepper, chopped
1 Zucchini, chopped
2 Cloves garlic, minced
2 cn Vegetable broth (14 1/2 oz.)
1 cn Crushed tomatoes (28 oz.)
2 cn Kidney beans (15 oz)
Salt
Pepper
Cooked rice or noodles
Throw all ingredients except rice or pasta into crockpot. Stir.
Cover and cook on low for 8-10 hours, or on high 4-5 hours.
Add rice or pasta at end and heat through.

Title: Mixed Vegetable Quiche

Yield: 6 Servings
1 Deep dish pie shell
2 Eggs
8 oz Evaporated milk
1 T Flour
1/4 t Nutmeg
1/4 t Seasoning
3 1/2 c Cheese, grated
2 c Fresh vegetables, chopped
Fresh parsley
Salt, pepper, garlic powder
Bake the pie shell at 425 degrees for five minutes. Set aside.
Mix eggs, milk, flour, seasoning and nutmeg with mixer. Cover
vegetables with water and microwave on high for five minutes. Drain
and place on paper towel.
Place 1 1/2 cups of cheese in pie shell, cover with vegetables, add
remaining cheese on top. Make a hole in the center of the cheese and
add egg batter slowly. Sprinkle with parsley. Bake at 325 degrees for
40 minutes. Let settle before cutting.

Title: Broccoli Salad

10 Strips cooked bacon,crumbled
1 1/2 lb Broccoli, chopped
1 c Red onion, chopped
1 c Raisins
1 cn Water chestnuts (optional)
1 c Sunflower seeds
MMMMM--------------------------DRESSING-------------------------------
1 c Mayonaise
1/2 c Sugar
2 T White vinegar
Mix dressing and let stand for several hours. Shake or stir before
adding to salad mixture just before serving.
