I am also looking for, if anyone has some, cottage cheese, special k and nut loaf recipes.

Here is a link to the (Ricotta cheese, not cottage) Neatloaf I just made and finished eating...terrific light lunch. It is the recipe from the Sri Chinmoy restaurants. I found the link on someone's website; I'll just add it here...
It was unbelievably delicious and tasted JUST like the restaurant's. I did not put in all the oil, just a tablespoon. I added about three button mushrooms finely diced. Upon reflection, after eating it, I would probably add a rib of finely diced celery.

I've been eating this all my life. It certainly is not low fat, but these are the always the best tasting!

Special K Loaf

2lbs. cottage cheese
5 eggs
½ cup butter
3 packets Dark G. Washington Seasoning
4 cups Special K
½ cup chopped pecans
1 med. onion, finely chopped
2 tsp. soy sauce

Mix together and bake in an oiled casserole dish for 1 hour at 375.
