LOOKING for: Tofu Sandwich Spread Recipes

I'm looking for tofu sandwich spread recipes. I find recipes all the time that are colored with turmeric and spiced up with onions. Is there anything else out there that you have found, or created yourself? I take my lunch to work everyday, and I can only eat so much peanut butter when there are no leftovers to take! :-) Thanks for sharing!

Funny you should mention peanut butter. Try Peanut Butter Tofu Spread
1 cup tofu, drained and crumbled
1/3 cup peanut butter
3/4 cup banana
Juice of 1/2 lemon
1 Tbsp honey
1/4 to 1/2 hulled sunflower seeds,raisins, or chopped nuts, optional

Combine the first five ingredients in a blender, or large bowl, and beat or blend until smooth. Add the optional items, serve as a spread on bread or crackers, make asandwich with the addition of sliced banana, avocados, or apples.

or try someting really different.
1/2 c Water
1 tb Tapioca
1/2 lb Tofu
1/4 c Cashews
3 tb Pimento, optional
3 tb Lemon juice
1/4 ts Dill weed
1/2 ts Onion powder
3/4 ts Salt
Blend all ingredients till smooth. Bring to a boil & simmer gently,stirring, for 5 to 10 minutes or until the toapioca is clear. Chill.

or more traditional Sunny Tofu Spread
1 lb. firm tofu
3 tablespoons nutritional yeast (optional)
1 tablespoon soy sauce
1 clove garlic crushed
1/4 teaspoon tumeric
2 teaspoon prepared mustard
1 green onion chopped
1/2 cup celery chopped
2-3 tablespoons lemon juice
mayonnaise or plain yogurt to taste

Mash tofu with a fork. Add remaining ingredients, using enough lemon juice and mayo. or yogurt to give desired taste consistency. Serve in a sandwich, pita bread, on a bead of greens
