RECIPE: Four Cheese Potatoes

Four Cheese Potatoes

8 cups frozen Potatoes, any style
¼ cup olive oil
3 cups shredded cheddar cheese, divided
2 cups shredded mozzarella cheese
1 ½ cups ricotta cheese
1 8-oz. carton sour cream
1/3 cup grated Parmesan cheese
½ cup finely chopped onion (green)
3 tablespoons fresh parsley
2 cloves crushed garlic
1 teaspoon dried basil
½ teaspoon pepper

Saute potatoes in oil in skillet 5-6 minutes, set aside. In large bowl
combine 1 ½ cups cheddar cheese and next nine ingredients. Stir well.
Gently
stir in potatoes. Spoon mixture into greased 9"x13"x2" baking dish.
Sprinkle
with remaining cheddar cheese. Bake uncovered for 30-35 minutes at 350°.
Yield: 12 servings.
