RECIPE: looking for: beet recipes

i have some really nice beets and was wondering if anyone had some creative ideas for preparing them. tia

This beet salad is a bit much for many non-Russians, but I find it delicious, and the quality of the beets matters. Since you have good ones, try it!

get out your food processor. Peel beets and then chop them up like slaw. Do the same with carrots. Dump this in a bowl and add golden raisins. Splash in some rice wine vinegar and spice to taste. I used a little bit of sweet vidalia onion salad dressing. This is awesome.
