Does anyone have a recipe for Chow Chow that calls for Cabbage, Apples and Green Tomatoes? I have misplaced the recipe. Thanks in advance.

I've never seen Chow Chow with cabbage, but I daresay it wouldn't hurt to add some if you want. In fact, almost any vegetable can be included in this type of recipe. You could add diced apples as an option, too. The following recipe is delicious. Annette

CHOW CHOW
l/2 small cauliflower, separated into small pieces
1 red capsicum, chopped
1 green capsicum, chopped
2 cups finely sliced celery
4 large green cucumbers, finely diced without peeling
2 large brown onions, chopped
1kg green tomatoes, chopped
1/4 cup salt
3 cups brown vinegar
2 cups sugar
1 tablespoon mustard seed
4 tablespoons cornflour
1 tablespoon turmeric

Combine all vegetables in a large bowl. Sprinkle with salt, cover and allow to stand overnight. Next day, drain vegetables and place in a large saucepan. Stir in vinegar, sugar and mustard seed and bring to the boil. Cook slowly, uncovered, for 30 minutes. Blend cornflour and turmeric with a little extra vinegar and add to the vegetables. Bring to the boil, stirring constantly then allow to simmer five minutes, stirring occasionally. Transfer to warm sterilised jars and seal. Serve with cold meats.

There's a recipe posted in the Harvest Forum you might be interested in. Annette
