Amaranth Date Bread

From The Bread Machine Cookbook - Melissa Clark (my favorite bread machine book!)

1 lb. loaf

1 cup water
3 Tbs. oil
2 Tbs. sugar
1 1/2 tsp. salt
1/2 cup cooked amaranth grains
1/4 cup amaranth flour
2 cups bread flour
1 1/2 tsp. yeast
1/2 cut dates, chopped
------------

1 1/2 lb. loaf

1 1/3 cups water
1/4 cup oil
3 Tbs. sugar
2 tsp. salt
3/4 cup cooked amaranth grains
1/2 cup amaranth flour
2 2/3 cups bread flour
2 1/2 tsp. yeast
3/4 cup dates, chopped

Add to your machine in the order given in your instruction book and bake according to manufacturers directions. Add the dates during the raisin-bread cycle, or 5 minutes before the final kneading is finished.
