LOOKING for: what to do about my beloved cake?

i'm a vegetarian, trying to become a vegan. i love cake (especially for birthdays). are there any substitutes ? i also live with my parents (who aren't vegetarians or vegans),so it's tough enough. i'm just a child, why must i buy my own food? oh, how i wish they didn't eat meat!if you have any ideas on what they would like also, let me know. thanx so much.

| I have heard that some people use soy milk instead of milk (chocolate flavour in chocolate cake, etc.), silken tofu instead of eggs. I do not know the conversion amounts. Milk probably ounce for ounce, and I would guess a couple of tablespoons of tofu per egg. Margarine or soy margarine instead of butter, etc. If you already have a recipe you like, you can start experimenting! |

| I am vegan and I eat cake all the time! Just find your favorite recipe and substitute soy or rice milk for milk, unrefined sugar for sugar (some vegans do not eat refined sugar because the refining process may involve animal bones), vegan margarine (Fleishman's unsalted works) for butter... eggs are a bit tricky because without them the cake may not rise properly. I use an egg replacer I buy from a health food store. I also add a little bit extra baking powder or soda and this helps. Being vegan doesn't mean missing out on your favorite meals, but sometimes you have to be creative with recipes and if at first you don't succeed, try again! I am not a kid now but I was a kid when I stopped eating meat and my Mom wasn't thrilled either so I know how it feels. |
