| I use Amaranth flour in bread. There was an Amaranth bread that our local bakery made that I absolutely loved so I tried making a loaf at home. I love the nutty flavor. My recipe is for the bread machine, but I'm sure there are recipes for making it by hand if you don't own one. If you're interested I'll post the recipe that I have, but you might want to look at the two sites that I listed. They may help you out. I haven't looked at them in depth, but they look interesting.
