RECIPE: Stroganoff

Comfort food, pure and simple.

STROGANOFF
crumbles to equal 1/2 lb ground beef
1 small onion, chopped
1/4 t. minced garlic
about 2 T. concentrated beef flavored boullion
salt and pepper to taste
1 lg can sliced mushrooms, drained
1 can cream of mushroom soup, undiluted
2/3 c. sour cream, or to taste

Using your preferred substitute for hamburger, saute crumbles, onion, and garlic in a half oil/half butter mixture until onion is limp. Add the rest of the ingredients except the sour cream. Add sour cream just before serving. Serve over egg noodles, rice, or tofu.

Cook's notes: I prefer Morningstar Farms Crumbles, about 6 oz will do it. For the boullion I use Telma brand that I find in the Kosher section of the grocery. Dissolve enough in 2 T of very hot water to make a thick liquid. The highly concentrated flavor really helps the dish. Serving the stroganoff over sliced or crumbled tofu makes this a great low carb meal.
