I have a 62 page word document to share thru the email, of vegetarian recipes. I bought this on ebay for about a buck from a lady in England, so some of the ingredients might not be readily available in every locality. It is FULL of great recipes that I think anyone would enjoy. Email me if you'd like me to email this to you. Sandy

Ingredients for Baked Beans, Vegetarian

* 1 pint pea beans
* ¼ teaspoon baking soda
* ½ tablespoon salt
* ¼ teaspoon pepper
* ¼ teaspoon dry mustard
* 1 small onion, minced
* ½ cup corn syrup
* 1/3 cup corn oil

Instructions

1. Vegetarian Recipe, Soak the beans over night.
2. In the morning, drain and boil till the skins begin to loosen, in water containing the soda.
3. Drain, combine with the other ingredients in an earthenware casserole.
4. Cover, bake slowly two hours, adding water as necessary; uncover to brown.

Broccoli Casserole
2 eggs, beaten

1-1/4 pound cheddar cheese, grated

1 small onion, grated

1 can cream of mushroom soup

2/3 cup mayonnaise

2 packages frozen chopped broccoli, cooked

Directions:

Preheat oven to 350 degrees.

Mix all ingredients except broccoli together. In casserole dish alternate layers of broccoli and sauce. Bake for 30 minutes.

1. Fried Green Tomatoes is not just a movie!

Slice tomato up as if you were slicing an eggplant.

Dip slices in egg batter.

Coat in flour or bread crumb.

Fry in olive oil over medium heat.

Place on paper towel when done.

Sprinkle your favorite cheese on it and enjoy!

You can also layer and make fried green tomato parmesan.

I second the tom parm. I just made a green tomato parm 2 nights ago. It was Fantastic!
I accidently knocked off 2 green tom's off a plant and decided I'd try something different. I dipped in egg batter, coated in crumbs and baked at a high temp to stay away from oil (breading sucks the stuff right up) and than layered the breaded tom with a low fat ricotta and topped off with low fat mozzerella cheese and red sauce, baked it and it was wonderful.
