I did this for several years. Not sure what grocery store, but they had a complete kit with the bamboo mat and also the seaweed, and can't remember all the other items. Made our own for quite a while. We got hooked when we went visiting on the coast and ate it for the first time about 15 years ago. We have moved to the coast and can find it at most restaurants now, and also have a friend that makes it all the time and loves to share with us. Hopefully you have a speciality store in your area that has all the supplies. When we were making our own the store also sold the smoked salmon for sushi. Good luck in finding the items. No personal experience with them so just based on the high acidity and the salt content I would think it safe. That is all the ingredients, correct? If so then that is more than ample salt for fermenting only 4 lemons. My only concern would be the sunny spot part as that normally only encourages bacterial growth - both good and bad - so lots of skimming would be needed. A clear container sitting in a sunny spot can get quite hot and sunlight is ideal growing conditions for bacterial growth with all that light. Thus the normal fermenting instruction of dark container and/or "out of direct sun". Dave

LindaC, there ARE a lot of recipes out there, from the ones that take vinegar and are like a quick pickle, to the traditional salt-and-vegetable combos that sit on the counter and ferment. Oddly enough, I have a big bucket of sauerkraut working in the back room, and still have cabbage, so I've been planning on making cortido for Elery, he would like the combo of hot peppers and cabbage and fermentation, I think. He does love kimchee and we have that in the fridge, so this would give him another option, plus I have all the ingredients! Thanks for the reminder... Annie

Nope. My life hasn't changed much. I value my personal space anyway so I try to keep my distance from people naturally. And we dont go many places in normal life. We like being home with each other. I do need my roots done and my ends cut, but I keep my hair long anyway so having it longer than normal isnt an annoyance to me. I am looking forward to people being less on edge and less rude in general when the restrictions are lifted. And I am looking forward to being able to buy stuff I need when I need it,not when the hoarders run out of money.
