Thank you, logic. Also, just to respond to your questions and comments you are posing regarding the insurance coverage for K&T...we bought our house 3 1/2 years ago. We're in FL. Our homeowners provider would not insure K&T and we were told that no insurance provider would cover K&T. I feel like a K&T hazard expert after this ordeal. You are absolutely correct that splicing into K&T is not the only hazard. K&T was used decades ago - in our case, in 1924 - therefore, over time rodents and other factors have eaten away at the wiring insulation which poses a serious hazard. Also, as you pointed out, we had a lot of K&T in our attic and recently added insulation (before we knew there was K&T still in the attic). Serious hazard! It's almost a given that since K&T hasn't been used in decades that it has either been spliced into at some point or some of the insulation has eroded and/or been compromised by rodents.

I'm not saying that they didn't screw up. And I'm not saying that a jaggedly cut switch plate is proper. There is a better solution, but there might not be a totally great solution. I'm just saying that it might actually be impossible to move the box to a more appropriate place. For instance, if there is a big wide structural post right in the spot where you think the box should go. At this point, it isn't practical to tear down the house and redesign it and reframe it. So it's time to make the best of a bad situation So your options might be to leave it where it is with a switch plate that is better cut. Or maybe move it over two feet to the other side of whatever is preventing them from putting the switch in the proper place. Which is better? Maybe there are some other options, but the 'ideal' might not be possible. It's also possible that the electrician is just lazy and incompetent and there's nothing blocking the proper placement. Keep pushing until you get some real solutions and explanations of why something can't be done.

White...... as your trim, or if LUTRON/rocker type, wall color matches. No please, to other finishes, they are not a design feature, to second Patricia above. Personally I would stick with trim white, as paint colors tend to change. Remember......a white toggle or receptacle glaring from within a painted/ plate? Not so great : )

To the left of the sink the backsplash should just be a continuation of the backsplash under the window sill. Darn it looks like you wrapped it into the window. I would remove the tile wrapped into the window on the right. Use a pencil liner or schluter for a clean finished edge. You can the lower the switch to a normal height on what will now be sheetrock painted wall. The backsplash on the left is just too much and looks heavy and stuck on. It does not all have to be symmetrical. Sometimes you have to think outside the box.
