What mortar for marble and glass mosaic?

I want to use marble and glass mosaic for my kitchen counter-top back-splash. My contractor told me he is going to use a 'quick-dry' mortar so he can save time to apply grouting on the same day. I am wondering what type of mortar he is talking about? Any drawback of 'quick-dry'?

Your contractor is a lot more knowledgeable than I. Just be sure and get a written guarantee on his work. Somehow I don't like his means of "saving time". I'm old fashioned in my mosaics. I'd use thinset and grout the next day.
