Comments (25)Yes, I'd be concerned with cross contamination as well - just as sushipup explained so well. I use a different mill for gluten-free flours (grains/beans/seeds) to avoid cross contamination and never use gluten-containing grains in it. I was hired to make a selection of GF cookies for Christmas for a person who has celiac disease, as a surprise from her husband. I wouldn't mill flour containing gluten in the kitchen for a week prior to making the GF foods, and throughly wiped down every surface in the kitchen before making anything GF. I use stainless steel bowls, rather than plastic to make sure there's NOTHING to cross contaminate things. My mother (now deceased) had celiac disease and I did a lot of food prep. to stock her freezer for her BEFORE there were so many things so readily available. There are a number of ingredients used in gluten-free baking that you're better off having than trying to substitute. These additional ingredients help to reduce dryness, increase volume and tenderness, and enhance flavor in baked goods and other foods. I was challenged to come up with cookie recipes, for a sorghum mill outside of town, that were made with "common" ingredients. WHAT, no xanthan gum, potato starch, arrow root, guar gum....??? But I did it! Instead of potato starch or potato flour I've used dried potato flakes (used for instant mashed potatoes), BUT, I made sure I found a brand at the health food store that didn't contain a lot of questionable ingredients. FYI - Potato FLOUR has a strong potato taste and I don't use it as much as potato starch. Potato STARCH, however, is often used in GF baking, especially in combination with other flours. I consider potato STARCH a staple ingredient for GF baking. Combining gluten-free flours with NUT FLOURS will increase protein and help mask the gritty texture often associated with GF flours. Nut FLOURS are made AFTER the nut oil has been expressed from the nuts and is a fine flour. Nut MEALS are made from the ground nut (oil included) and are more gritty than nut flour. You'll find the names are often interchanged, so buyer beware.... Ground almond meal can replace dry milk powder in recipes as a dairy-free alternative. You can also make your own nut milk at home to use as a dairy-free alternative. Comments (10)Acv, can be an effective way to loose weight or to improve your health. As with everything, it works different for everyone. It is most effective if taken 3x aday 4 if you are a snacker. Start with 1tsp and work your way up to 2 or 3 tsp. 15- 20minuutes befor each meal. You can add it to a small amount of water or a whole glass. Always follow it with more water. I mix mine with honey. I did use juice for a while but I wasn't getting the appetite surpressing effect as much. Comments (22)Pork chops, apples and potatoes. Fry the pork chops (thick ones or thin ones as you like) in a frying pan according to recent cookbooks (they don't dry out with the fast fry used in Joy of Cooking and they are a little pink in the center when they are done.) In the other fry pan, melt two pats of butter and some cooking oil. Add as many thinly slice potatoes as desired, unpeeled for more nutrition. Brown slightly and then cover the pan as they finish cooking to near tender over low heat. About 10 minutes before the potatoes are done, thinly slice 2 to 4 cored apples, top the potatoes in that frying pan with the apples, and sprinkle with 1/4 or more teaspoon of cinnamon. Turn the apples and potatoes frequently till the potatoes are tender and the apples are as tender as you like them to be. You can add more cinnamon to the potatoes when you turn them into the apples if you like. If you want the apples real soft, put them in with the potatoes earlier. That's dinner. Comments (16)I would go back and re-visit granddaddy's first response. 'copycat' means recipes on-line through a search....people creating a homemade recipe from a favorite store purchased frozen processed food item. If you know the exact name of your favorite, Like Kasha lemongrass chicken with snow peas...(not sure the exact name, but the only frozen dinner i have had), .... *working out of town years ago in a hotel with only a microwave. Someone out there has a homemade version. I make one but i've never written a recipe, i wing it. A very simple 'TV' dinner at home. In a small saucepan with lid, add 1 tbsp oil, i use coconut, on med-low heat, place two skinless chicken breast, in a pan that fits them tight but in a single layer...top with very small diced...one celery rib, one carrot, one medium onion, two roma tomatoes chopped, half a sweet potato or one small reg potato and a minced/chopped garlic clove. Lower the heat to a simmer, your lowest setting. (all stoves are different) you want this to simmer/steam, not sizzle and brown. Once simmering, add 1/4 cup water, white wine or stock. Let simmer/steam for 1/2 hour. No need to stir, let it be. After the 1/2 hour remove the chicken breast to an oven sheet pan/cookie sheet. Top with a drizzle of balsamic vinegar or sesame oil/soy sauce blend. Just a tbsp will do. Pepper and any herbs or herb blend you like. Place in your pre-heated 350 oven. At the same time turn up your 'sauce' veggies to med heat and reduce a bit if it needs it. Until the potatoes are soft. I take half of this and put in the blender with a tbsp of non-fat greek yogurt...instant sauce. And back into the sauce pan, stir. Turn heat back down to low, Take out your chicken breasts from the oven...at this point they should be tender cooked after in the oven 15 min. Slice as you like it and back in the sauce. This is where you can customize your meal. Lay on top sliced asparagus, snow peas, chopped spinach, just about any veggie to stream for 5-10 min. The veggie topping choice will be crisp and fresh. I like to put heartier veggies like cauliflower, broccoli, baby artichokes, etc. on the sheet pan in the oven with the chicken to give it the extra needed cooking time. *note, i prefer a stick blender in the saucepan instead of a blender, easier cleaning... *we prefer skinless bone-in chicken thighs over breast. Bone-in skinless breast would be better, adding its own stock to the cooking process. *fresh herbs like cilantro or parsley, added at the end, a fresh squeeze of lemon or lime, 1/4 cup of low-fat coconut milk instead of yogurt... Lots of personalizing, using what you have or what is fresh in your market and seasonal. This makes 4-6 servings depending on the size of your chicken. Can be portioned and frozen. I have 9 chicken thighs marinating in ginger, soy, toasted sesame oil i prepped last night...these are huge. We will have leftovers for a chicken salad. I'll do a greek style with olives capers, chopped apple, grapes, celery, cashews, a bit of feta...lots of lemon. etc. over a bed of fresh, not cooked spinach. (need to use up) I only salt at the end. If it even needs salt. Sometimes a bit of sriracha and richer spice blend in the oven topper sauce. Tonights meal may be on the grill as the weather is lovely. I'll still start a similar 'sauce' but it will be more of a bbq style...and probably over a mixed grain, not pasta.
