Confused About Apple Pie Jam/Apple Pie Filling
Comments (20)Well then, that must have been my problem because I did double the recipe!! I didn't realize you couldn't! I know you're not supposed to fool around with amounts in recipes so you keep the acid ratio correct, but where this was just strawberries and sugar and nothing else in the recipe I figured it was ok! I guess not! And I measured out 4 quarts of whole strawberries. The recipe was 2 quarts of strawberries and 6 cups of sugar. It didn't say to cut them or mash them before measuring - in fact (I'm remembering off the top of my head here as I don't have the book with me) it said to crush the strawberries one layer at a time and then to mix with the sugar, so it sounded to me like you measured the whole strawberries, then crushed them and that's what I did. I'm not going to fuss with what I already made - as I said, it won't go to waste as hubby will use it as pancake topping - we've even been known to plop a spoonful of jam in a bowl of oatmeal, so this stuff will work for that as well. But I'm glad I spoke up because for future adventures in jam, I wouldn't have known any of this and would probably have given up on it if I kept failing! And I thought it was weird that the jam recipe that used the pectin used an extra cup of sugar from the one without pectin. I've learned so much from just this thread - thanks so much guys! I want to take my next adventure into the realm of peaches! Peach jam sounds yummy and if I fail again, hubby does like peaches, so he'll have more pancake topping than he knows what to do with lol!! Comments (7)the smoke flavor from the chipotle is likely going to hammer any subtle flavors from what ever vinegar you use, so I'd go with rice. White distilled vinegar might make it bitter. Other than that, I've had very good luck with Spectrum white wine vinegar, and they also put out a white balsamic thats very good with heat. Here is one explanation I found - and the rest of the site is pretty interesting too I will be watching this thread to see what others have to say. She remembers her mother making Vinegar Pie when she was a small girl and WavaâÂÂs grandmother made Vinegar Pie as a Kansas Pioneer, while living in a sod house in Western Kansas. Vinegar Pie was a pie that pioneers made in the winter when the dried fruits had been depleted. IâÂÂve included two Vinegar Pie recipes. Comments (15)To give credit where credit is due, the original HOV mixture came from a nutritionist by the name of Adelle Davis. Her books are from the 40's-60's. Google her or I made it easy go here https://en.wikipedia.org/wiki/Adelle_Davis The book it was in may have been "Let's Eat Right to Keep Fit" from 1954. I discovered her books in the early 70's. She was an early advocate of cutting out the processed foods and eating whole foods only and also she talked about how bad canned food were for you. She was WAY ahead of her time. Although the above proportions are not the original "recipe" as it was NOT equal portions but it was safflower oil, apple cider vinegar and honey. I do not remember the proportions, but you mixed up about a cup or so at a time and drink 1 tablespoon (?) or maybe 2 teaspoons before each meal. The reason for the oil is that on a diet, most people completely cut oils & fats out, but you need some oil in your diet, so this made up for it. The vinegar aids digestion.
