This is one of the most simplified and diversified meatless products that any cook can utilize. It is economical and can be prepared in minutes. This meat substitute can be prepared to satisfy the tastebuds of any meat lover, whether it is chicken, beef or pork. It can be used in soups, stews, burger patties, stir-fry, meat loaves and salads. It will stand the test to replace meat in any recipe and is protein rich.
4cups white flour
4cups whole wheat flour
4cups cold water
Mix these ingredients in a large bowl creating a dough ball.
Pour 8 cups cold water over the dough ball and let stand for 20 minutes.
Now the dough is ready to be washed.
Put dough in a colander and wash out all the flour, or carbs, by gently kneading the dough under gently flowing cold running water. Do this until the white runoff water turns clear.
Cut the dough into thin strips. You now have your meatless gluten protein base. Now it needs to be seasoned and cooked to create chicken, beef or pork.

I love this cookbook. I used it to get my children interested in eating vegetarian. I have been worried about the amount of hormones being given to chickens. I have heard one horror story after another, but my family loves chicken. So we made some fried chicken out of white and whole wheat flour! We turned our kitchen into a science experiment. Everyone loved the taste. Then we made hamburgers. They were so much better than a "yuk", as my kids say, Garden Burger. Mom loves the protein in Mary's Miracle Burger. And that's only the beginning. There is every soul food delight you could ever want, and all with out that questionable, massed-produced meat.
I am so excited to get my hands on this cookbook. It was first realeased in 1972 to rave reviews. It was decades ahead of its time. It was republished by the author in 1992, but she was too busy helping and feeding the homeless in the inner-city of San Bernardino to adequately promote it. Well, you can buy it at The Recovery Zone Gift Shop and it is a winner!

The Soul To Soul Experience
Not entertainment, nor a story, "Soul To Soul" is an experience Mary Mckinney shares with the world. The "Soul To Soul" experience is daily life in Louisiana and Texas after the war among 18 brothers and sisters. It is father hunting and catching fish for supper after a day in the fields, or mother baking every kind of cake you could imagine for the Christmas holiday. It is the family garden teaching children to live with the land, or the act of sharing with a stranger as you would a brother. "Soul To Soul" is a manner to live in harmony with yourself and the life around you.
Mary McKinney is the author of the vegetarian cookbook "Soul To Soul". In this book are found the tools for good living on a low income budget using what people do not normally think of as raw materials. Experts of the Loma Linda University School of Health, Dr. Kay Kuzma and Dr. Eppie Hartauiker, spent 2 years convincing Mary to share her astonishing approach to food and life. Today Mary is convinced that the happy faces of the parents and children in, and around, San Bernardino, California, where she prepares meals, could be found in millions of homes if parents only knew her craft.
When was the last time you went to the local desert and cut down a batch of cactus to provide the family a vegetable for dinner? What do you do with watermelon rind? It will make a delicious syrup or sauce for your homemade pancakes. Have you enjoyed carrot pie, fried green tomatoes, squash cake, walnut northern bean pie or any of a multitude of such desserts costing pennies to make, yet nutritious and delicious?
Mary conceives of the approach to family nutrition as an experience the whole family can join in. The family ties created in a summer weekend spent picking fruits or vegetables can provide a wonderful ritual for family exchange. Canning for the winter or weekly open-air shopping is fun and radically reduces the family budget.
Mary has found through experience that a multitude of questions arise at the suggestion of a change of habits or an introduction of these new ideas. In an attempt to help people make the experience of "Soul To Soul" work for them, Mary offers many social events during which she answers questions, inspires the participants and provides them with actual demonstrations and samples of the recipes in this book. One such event was a five course meal at Loma Linda University for 150 students. These students, whose main interest was nutrition, expressed wonder at the ingredients used and the low cost for raw materials used in preparing the meal.
