do you want the pasta recipe or the sauce recipe? Homemade pasta is so easy to make but hard to explain- seems to be one of those things you have to see to understand. Baically it is one egg per person and enough four to make a hard (pie dough consistency) dough. Knead it until it gets elastic. Roll it out very thin (you should almost be able to see the table through the dough. cut into strips (or use a pasta machine) Let it dry out for a half hour and it is ready. Cook for just a minute or two in boiling, salted water. |

Here's one for Spinach pasta. I found it on the internet a long time ago, but don't remember where. Spinach Pasta Dough makes 1 pound 1 1/2 cups flour 2 large eggs either 1/2 of 10 oz frozen spinach thawed or 1/2 lb fresh spinach Cook spinach, drain and cool-squeeze out any excess liquid. Chop very fine with a knife. Pour the flour onto a work surface, shape into a mound and scoop out a deep hollow in the center. Break the eggs into the hollow. Add chopped spinach. Beat the eggs and spinach about 2 minutes. Slowly incorporate flour into eggs/spinach mixture until a nice dough is formed. Test dough by pressing your thumb into the middle of the dough and if it comes out clean-it's ready to knead. Knead by hand or by machine until smooth as baby skin. Cut pasta as desired. |
