CREAMY TOMATO SOUP

Serves: 8 (2 qts.) Ready in 30 minutes or less
1 medium onion, chopped
2 T. reduced-fat margarine
2 cans (14-1/2 oz., each) no-salt-added diced tomatoes, undrained
2 cans (10-3/4 oz.) low-fat condensed tomato soup, undiluted
1-1/2 c. skim milk
1 tsp. sugar
1/2 to 1 tsp. dried basil
1/2 to 1 tsp. paprika
1/8 to 1/4 tsp. garlic powder
1 pkg. (8 oz.) light cream cheese, cubed
IN a saucepan, saute onion in margarine until tender. Stir in the next 7 ingredients. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Stir in cream cheese until melted. Serve immediately!
