LOOKING for: Yeast, sugar and malt free bread

Help! Im on a mercy mission for my father. After a recent trip to the dietician he was told to avoid yeast, sugar and malt, but he enjoys his bread and it is a very large part of his diet. It would be very much appreciated if anyone has a recipe for this bread that is for a breadmaker. Is there anyone who can help me?

There are many bread recipes at http://countrylife.net in the Recipe Bin. However, making bread in the breadmaker without yeast is not feasible. The pre-timed cycles are not long enough for bread to rise using sourdough starter (which is yeast from the air or a bought culture).

Ask the doctor if sourdough starter might be tolerated.

If you use Google.com and search for "+yeast+free+bread+recipes" you should find some.

You do not need to add sugar or malt or any other sweetner to bread, will take longer for fuel from flour to feed the wild yeast in sourdough starter if this is allowed.

If the above is not allowed then make biscuits, scones, and other quick breads using baking powder and/or baking soda.

Some of the recipes for banana bread or other may be sweetened with artificial sweetner such as Splenda or Stevia. You could experiment and try making an unsweetened banana bread or similar which would possibly substitute for regular yeasted bread.

Store bought breads will have all the things you need to avoid unless you accidentally find a place that makes special breads.

Nicole Dumke also has written an excellent book on making a variety of bread's including yeast and malt free varieties. Although most claim to be able to be made in bread makers, their options for using oven.

This one isn't for a breadmaker though.

IRISH SODA BREAD

INGREDIENTS
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
3 tablespoons margarine
1 slightly beaten egg white
¾ cup buttermilk
Nonstick spray coating

DIRECTIONS
In a medium mixing bowl stir together flour, baking powder, soda, and salt. Cut in margarine till mixture resembles coarse crumbs. Make a well in the center of the mixture.

In a small mixing bowl combine egg white and buttermilk. Add all at once to dry mixture. Stir just till moistened.

On a lightly floured surf ace knead dough 10 to 12 strokes till nearly smooth. Shape into a 7-inch round loaf.

Spray a baking sheet with nonstick spray coating. Place bread dough on baking sheet. With a sharp knife, make 2 slashes in the top to form an X.

Bake in a 375° oven about 30 minutes or till golden. Serve warm.

Whole Wheat Raisin Soda Bread: Prepare as above, except substitute 1 cup of whole wheat flour for the 1 cup of the all-purpose flour. Add ¼ cup raisins to flour mixture before adding liquid ingredients. (86 calories per serving).

Makes 1 loaf (16 servings).

Cooking Time: 30 min.
