How big is too big for DIY drapes?

I have two very large front windows I want to cover with pleated drapes. For each window I will need two finished panels over 75" each. By the time I get done pleating I'm looking at four widths of fabric for each finished panel. They will have to be lined and possibly interlined.

I've sewn a lot over the years but have never tried working with this much fabric at once. Is this something I can reasonably do? I have the space to set up for it and I can buy tables for cutting and working but is something this large best left to professionals? I'm getting quotes for $1,000 for labor and the linings (no install) and I already have the drape fabric. Any comments would be welcome.
