Turkey Bone Minestrone Soup

This is one of our favorite soups. There is quite a bit of meat left on a turkey or chicken carcass so don't throw them away--put them in the freezer and pull them out again later to make this soup--you won't need to buy meat for it!

Turkey Bone Minestrone Soup

2 cans v-8 juice or equivalent
two cups frozen mixed veggies
1 cup pasta or rice
4 tbsp Worchester sauce or to taste
Salt and Pepper to taste
Add Water to the consistency you like.

Cook the turkey/chicken bones until meat has fallen off the bones. Pour through a sieve, separate meat from bones and put meat back in pot. Add rest of ingredients.

I put leftover vegetables/pasta in this soup and it is a great use of leftovers.

Oh, and burn those bones in your fireplace or wood stove--makes great fertilizer when you spread the ashes on your garden (bone meal).
