maintenance for hot water heater

My electric/gas bill is horribly high and I've been researching different ways to reduce it. So far I've taken numerous steps but I read that I'm supposed to maintain my hot water heater (gas) annually. Sediment develops and it should be drained, etc--a variety of things happen over time that make it operate less efficiently. I also read that this really requires a certain level of skill that I don't believe I have so I assume I have to call a plumber. Plumbers are very expensive...is anyone aware of the benefits of maintaining your hot water heater properly (something I have not been doing)? Even if it just takes an hour or less, it will cost about $120 to have a plumber out...is it worth it? I'm thinking that from a safety perspective it should be checked periodically but, honestly, I've never given my hot water heater much thought and, despite searching my manuals and warranties, I can't seem to find one for the heater.
