Keeping bacon, deli meats, lettuce etc fresher longer!

Don't toss those cereal bags from inside your cereal boxes!

They're treated with a preserving agent (kept your cereals fresh, right?;-) and if you remove bacon from its original wrapper, rinse it all and place it into a cereal bag...voila! No gungy, goopy bacon, ever! The same with deli meats, lettuce, anything you want to keep fresher longer!

You're gonna love this one!! ;-D

I am not sure if I understand. Do you rinse the bacon bag, put the bacon back in it and then put this package in the cereal wrapper? Do you keep all items in their original packaging and then place them in the cereal bags? Of course, I just threw away a box of cereal with its bag inside it. LOL

Marie: toss out any packaging that the bacon, meats, etc came in. I rinse the bacon as it comes out of the package (as a whole), then pop it into the cereal bag.
Those packages that deli meats, bacon come in don't have any cereal bag preservatives in them, so the contents deteriorate more quickly. The bags are also great for any fresh veggies, too!
Honestly!!! You're gonna love this and treasure those cereal box bags! ;-D

Another post that is now public: I would like to make to a kind of Italian sausage (what else would a Jersey girl make) with the pork and venision -- I don't have a smoker... any suggestions? My reply: OK, start with lots of garlic, and you can even add things like rosemary, oregano, thyme, sweet peppers, onion, and even cheese. The onion and peppers I use are dried and don't add more water. The cheese I use is a high melting point cheddar that's cubed, available from one of my sources. All these are also available from the sausage making suppliers. If you like fennel seeds, add that too with a little anise seed. When I do fennel, I grind some in a small coffee grinder and use some whole as well. Also, ground black pepper and coriander are useful as is sage (easy on sage, its hot spicy). I use fresh and dried garlic and any recipe that calls for it I usually double or triple that amount. If the venison is gamey tasting, you can also add a little ground up juniper berries. They take away some gamey taste, but go easy. Italian sausages are usually all pork, no beef, but as mentioned, salami and pepperoni are OK with beef, and pork or venison, as is summer sausages. Things like hot dogs and bologna are pureed meat with cereal or soy added. For a smoky taste, I use liquid smoke. They sell small bottles of Wrights Liquid smoke in some supermarkets near steak sauces, but I usually buy a half gallon bottle from a sausage maker supplier and use maybe 2-3 tablespoons on a 10 pound batch, unless I want a lot of smoky taste. I also make a really good Canadian bacon that uses a whole boneless pork loin. I get a ham or bacon brine cure mixture and inject it into the pork. Then I place the injected pork in a big vacuum tight vessel and fill it with the brine and pull a vacuum on it for 1-2 days. THis last time, I added some maple syrup to give it a special tang. It too gets liquid hickory smoke flavor. Baked slowly at 200 degrees about 6 hours. Cooled, chilled and sliced. Then, I use a Food Saver machine to pack small amounts of it. Store cost about $6+ a pound, my cost under $2.00 a pound!! I have a decent digital scale that also weighs grams. I use Nitrites in all my sausages as they are not completely done in a refrigerated environment like they do commercially. The Nitrite amounts are tiny and that's what gives cold cuts their red color. They are tinted pink and are mixed with salt, so the ratio is easier and more accurate to measure. That's the main reason I don't use Morton Tender Quick, as you have little control if its added too much. I make pastrami out of corned beef, but simply coating them before they are slowly baked. A year ago, I made about 40 pounds of pepperoni and salami each, and the were not only baked very slowly (8 hours at under 200 degrees), but also dry cured for about a month at room temps and refrigerated. I used fibrous casings that are not edible, as I stuff these casings very tightly with the meats. Using edible collagen or fresh casings will burst if I were to use them. So, when I want to slice the salami and pepperoni I peel it first. I gave some to a kid who though it was a bit tough, until I asked him if he has peeled it beforehand.. DUH!! I have a professional meat slicer too as well as some vacuum systems I use to marinate and do a little home canning with. As mentioned, after mixing and before stuffing, cook a tiny sample and taste to see if it suits your taste buds.

Well, I'd feel guilty if I didn't throw my voice in here. And I'm not trying to talk you out of it, because I know that's not possible. No one was able to talk us out of it. :) Like Nancy said, you can do all the right things and still go broke. I'm recent proof of that one. Make sure you are in a position where you do not need income from the business on which to live. I didn't pay myself a dime for five years; it all went back into the business. If you know that going it, then you're either prepared or pleasantly surprised. And please think about consulting with a smart CPA to determine how best to protect your home and personal assets. His/her advice is worth every penny of his/her fee. Sandwiches -- I'm strange in that I don't like sandwiches on big rolls. I have a small jaw and just can't get my mouth around them! So I prefer sliced breads, wraps and pitas. One of my favorite sandwiches is baked turkey (not smoked!) with harvarti cheese, roasted red peppers, spinach leaves, sprouts and sunflower seeds on a whole grain bread. While I love tuna, chicken and egg salad, I never order them in restaurants unless I am VERY familiar with what goes on in the kitchen. I seldom order green salads out for the same reason I don't buy pre-bagged lettuce mixes at the grocery -- that mysterious pastic-gassy smell makes me gag and no amount of rinsing will remove it. There is a place in Reno that preps their own lettuces and has a delicious Grrek-inspired salad of romaine, red leaf, tomatoes, feta, olives, pepperonici, etc. It's simple, but because they use really good ingredients, it's delicious.

Can I freeze uncooked bacon, and if yes, for how long?

Just 2 of us here so I always freeze the bacon. I don't freeze it in one lump, though, I freeze it in 2 strips "each." I take a large sheet of parchment paper and put 2 slices of bacon near the bottom, then roll once and slap another 2 slices of bacon on the parchment paper - and I continue this (takes about 6 or 7 rolls) until my pound package of bacon is all encased in the parchment. Then I slide it into a Ziploc freezer bag. Using the parchment (it doesn't stick to itself) makes it very easy to remove what I need (usually 2 strips for soups, 4 strips for breakfast) and just throw the rest back in the freezer.

We do a lot of our shopping at TJs and Costco. I wish we had Ikea. I like TJs fresh vegetables...they keep well. I like their avocados much better than Costco. TJ simmer sauces, red and green curry (I usually doctor them, but they're a decent base. Simmered the green down with a can of coconut cream...yum.) We're hooked on the organic corn chips. They're like fritos only not as greasy. Grade B maple syrup. Frozen wild caught salmon fillet. Sweet potato fries. Their mustards. Harvest Grain mix. Olive oil. And triple ginger cookies. I grab a few of their frozen things to keep at work. They're a little bland but don't have a lot of unpronounceable ingredients. Rotini w/grilled veggies and pesto, bowties w/spinach and cheeses, chili relleno and the cheese enchiladas aren't bad with some sour cream and salsa. The mac and cheese is ok too, for frozen. Costco for most of our staples. We're pretty happy with Kirkland brand. Organic sharp cheddar is good. Lately we've been getting the baby romaine. Makes great lettuce wraps.

Is it possible that this would also work with the bags that come in cracker boxes? We are rye Triscuit maniacs, and I always have plenty of those... though they're heavier I think than cereal bags... I'll give it a try and let you know.

Yes, even cracker bags work! Keeps those crackers crisp and fresh....does the same for refrigerator foods...I use them for green onions, lettuce, deli meats, bacon, anything I want to keep fresher longer!

Do you rinse out the original cereal bag? What do you use to seal the bag with the new contents?

Twist the open corner and seal it with those plastic doo-hickeys that hold bread bags closed.

I have a question.

They tell us to reheat food only in plastic containers that are microwave safe, as some of the chemicals in other types of plastic which may leach out into watery foods during heating/cooking may be harmful.

As prepared cereals are dry, do you suppose that some of the chemicals that impregnate the cereal bags might be harmful after leaching into replacement contents that have some liquid/water/fat in them?

;-D Hasn't hurt me yet, Joyfulguy! Actually, I doubt that the BHT (?) in the bags would be harmful if moist foods were put into them. I'm sure there would be a warning of some sort and/or they wouldn't be approved at all, even for dry foods. Just mho...I guess if I were concerned I could do a little research...

I'm curious to know if anyone's tried this and found that it saves their meats/lettuce for longer periods of time...I'm never faces with 'mucky' deli meats or bacon or wilted lettuce! Enjoy!

Anyway....from one Ontarian to another, Joyful....hope you try it anyway, and find it helpful! ;-)

With deli meat, if I buy in bulk more than I need, I just freeze it. The day before I want it, I take it out and thaw it in the refrigerator.

I bought Fridgesmart products from a friend who sells Tupperware, and they are AWESOME! Granted, they are an outlay at first, but they keep fresh veggies fresh at least twice as long, and lunchmeat and cheese too! It has little vents to adjust the amount of "breathing" the vegetables do and a printed on chart to tell you how to set the vents for different items. I love them. Of course, I spent a fortune at a party and then went yard saling and found some pieces for a few dollars from a former consultant who was clearing out her inventory. Ebay is another good place to look for it. I highly recommend it!
