Icing sugar question............

Seeing as my supply of regular sugar is high and the icing sugar bag is empty.....has anyone made icing sugar using a blender or magic bullet ? If so did you notice any difference in the taste, texture of the icing when you made it up? And yes this belongs here vice cooking forum because regular sugar is cheaper than icing sugar in my area.

You can easily make powdered (confectioner's) AND brown sugar from granulated sugar. Since the Magic Bullet doesn't have a large capacity you might start with blending 1/2-cup of granulated sugar (1/2 c. granulated sugar will equal 1/2-cup powdered sugar). Use immediately, or if you want to store it add 1 T. cornstarch to each 1/2 c. of granulated sugar to make powdered sugar, to help keep it free-flowing.

When using it for icing, add the cornstarch in with the granulated sugar. On-line instructions say some recipes require a binding agent in the powdered sugar to work properly, so include a tablespoon of corn starch per cup of sugar during the blending process. It won't affect the taste but will help the powdered sugar mix properly with other ingredients.

Word of caution.... Sugar in a blender with a plastic bowl can scratch it.

You may want to sift the powdered sugar through a very fine-mesh sifter to use it for icing. When you read in older recipes to use 10X, 6X and 4X powdered sugar, those numbers indicate the size of the mesh used to sift it. 10X is the smallest and the powdered sugar is sifted finer.

To make brown sugar:
1# granulated sugar PLUS 3-ounces molasses (by weight on a scale, not liquid measure). Process about 1 minute in food processor.

I am so very sorry it took me this long to get you the soft sugar cookie recipe. These are just like the ones you can buy in a supermarket: soft, bland and loved by kids. Soft Sugar Cookies for a crowd 1 cup butter 2 cups sugar 2 eggs 2 tsp vanilla 1 cup milk 4 tsp. baking powder 6 cups flour 1 tsp. salt Cream the butter and the sugar. Add eggs and vanilla. Alternate milk and the flour mixture to the batter. Refrigerate before rolling out dough. (I roll out onto parchment paper so I don't have to add more than a sprinkling of extra flour). Bake at 350 degrees for 10-12 minutes. When cool, ice with your favorite icing and decorations. (My MIL notes here "Uf bitm the cookies are horrible!") My kids adored these cookies and they are very spoiled about homemade goodies.

Hmmmm my macaron recipes are in ounces and grams. However, for convenience sake, I converted the egg white measurement into a liquid one, so I won't have to weigh them ever again - my scale isn't really made for weighing liquids. You can always do the same with your dry ingredients - measure them once the way the recipe specifies, and see how much that is in more convenient units. For sifted vs non-sifted stuff like sugar or flour, you might want to try it several times, even on different days to see if atmospheric conditions/humidity affect the conversion factors. At least they aren't sticky/gooey like egg whites.

Sugar cookies / royal icing

I don't find it difficult as much as tedious, but I enjoy it. I use a Martha Stewart recipe for the cookies, and I make royal icing using meringue powder (safer than using raw egg whites). Just make sure you have a few hours to 'play'. Once the cookies are baked and completely cooled, go to work! (I generally bake the cookies a day or so ahead of when I'm going to ice them, so it's not as much of a time commitment for one day. Since the dough has to chill at least 3 hours before it's baked, a lot of times I'll make the dough one night, bake the cookies the next, and then ice them on a day I have a few hours.) I use piping bags though I've seen royal icing brushed on using a small paintbrush. You'll have to see what you're most comfortable with, or maybe even use a combination of techniques. I also use paste food coloring to tint the icing since it doesn't affect the texture of the icing like liquid food coloring does (especially if you're needing an intense amount of color). There is a bit of discussion about whether cane sugar or beet sugar gives better results in baking....some would swear that cane sugar is better. often beet sugar is cheaper...so labeling a product "cane sugar" is a marketing ploy, but reflects a real product. you can pretty well bet that a product labeled just "sugar" is beet sugar. Granulated sugar can be either from sugar cane or sugar beets, where cane sugar is only from sugar cane. Linda C
