If it dries fast, there should not be a problem with mold. Did you get a couple of dehumidifiers in there today?

Is the roof installed?

It should NOT have leaked.

Not familiar with the specifics in your situation, but in an occupied house with that much water intrusion, you immediately call your insurance company and get a remediation company sent. There should be dehumidifiers, fans and yes, some tear-out as needed. Given how close you are to completion I don't see why your situation should be different.

open cell will dry..closed cell will not.

It is open cell foam. So we took off the foam in that area and let everything dry up. It was the roofers fault. They came back and patched the area on the roof well. We have had one more rain after that and have not seen any water leak. Now I need to call the foam insulation guys to come and patch it up.

This is correct, and closed cell does not normally absorb any water that needs to dry out.

The problem it has is any water between sheets of closed cell cannot easily escape.
