Roof Replacement - need advice

I will be replacing my 22 y/o shake roof with an architectural asphalt shingled roof. A year ago I got 3 bids between $18k and $20k. I just got a fourth and here is a summary:

1. Remove Wood shakes/shingles - tapersawn - #1 cedar
2. R&R Valley metal - copper
3. Remove Additional charge for steep roof - 7/12 to 9/12 slope
4. Additional charge for steep roof - 7/12 to 9/12 slope
5. Remove Additional charge for steep roof - 10/12 - 12/12 slope
6. Additional charge for steep roof - 10/12 - 12/12 slope
7. Roofing felt - 30 lb.
8. Laminated - comp. shingle rfg. - w/out felt
9. Ridge cap - composition shingles

  1. Flashing - L flashing - color finish
  2. R&R Flashing - pipe jack - lead
  3. R&R Roof vent - turtle type - Metal
  4. R&R Chimney flashing - large - copper
  5. Dumpster load - Approx. 40 yards, 7-8 tons of debris
    NOTE: Decking was not inspected at time of estimate. If decking is spaced as is traditional with Shake Roofs, all decking would have to be replace before shingles can be applied.

I am wondering if the shingle manufacturer makes a difference? I like the shake look and wondering if the architectural that is made to look like shake really does? Is there a manufacturer that offers a better product of this type? I have copper valleys now and wonder if they can be reused. This bid quote is $101.98 LF for new which I think could be a significant amount. Seems like it could be reused. Any insight into this bid or questions I should ask? Any color suggestions? Thinking grey or black.
