Whether or not the look will be appropriate in your home has a lot to do with proportion. With a lower ceiling, the coffers have to be shallower. And the room itself has to be physically large enough in LxW (as well as the H mentioned) for it to work. I see way too many people using décor choices inappropriately, and that is one of the things that will cause it to look dated in a few years. If it's appropriate to the style of the house, and it's proportionate in size, then it has a much longer shelf life. Be careful that you take into account all of those variables, as it's a darn expensive choice to regret later.

A finish carpenter is who usually creates the coffers.

With only a 10' ceiling to work with, and that big of a room, you're going to be VERY borderline with pulling it off successfully. The coffers will need to be shallow, to keep the head height, and that doesn't offer as much room for the molding. As it is, an 18x25 foot room with a 10 ceiling is already pushing the proper proportions for the ceiling height. You may want to mock it up with some cardboard taped to the ceiling first. Lowering the ceiling height even 6" and making it so decorative can make occupants feel "pushed down" with a room that large.

I have seen a house with 8' ceilings and 5.5" (1x6) coffers and it was fine. To think "only 10' ceilings" is crazy

I've done coffered ceilings in rooms with nine foot ceilings. Looked fine IMHO.
