Exposing brick

We have a chimney that goes through our kitchen in one corner. It currently has a plaster coating on it, which blends seamlessly with the existing plaster wall.

We are moving the wall slightly, and would like to expose the brick.

What's the best way to do it? I think there is metal mesh attached to the brick, which is the substrate for the plaster coats. Not 100% sure of that though.

Obviously if there is metal, ripping it off will make the plaster come too. But what's the best method? Chisel or tile scraper with rotary hammer?

Once it's all clean, then what? Should we shellac it or do something to seal it?
