What level of drywall finish is required behind the range??

I had already drywalled and finished to a level 4, then I had to have the plumber cut out a 2.5' x 2.5' section to move the gas for the new range. Am I within code if I just screw the piece he removed back to the studs and do a single layer of mud and tape over the joints? Several inches of the section will be behind a kitchen cabinet which is holding me up now. If a level 1 finish is good enough, I can have that cabinet placed and move on with the project much more quickly than if I need a level 4. I am in California. Thank you!
